Boiled Eggs with Sautéed Spinach

Eggs and spinach - so easy and a great way to start the day or snack in between meals.

 2 eggs
 2 cups spinachwashed
 1 tbsp extra virgin olive oil
 1 garlic clovecrushed/chopped
 squeeze of lemon
 salt and pepper

When you combine eggs with spinach, you have one of the healthiest meals. Eggs and spinach are both nutrient-dense and are a great source of calcium and iron.

Getting started

Place eggs in a saucepan and cover with water. Bring to a boil and then remove from heat and let sit for 10 minutes.

Add oil and garlic clove to a sauté pan. Heat over low heat until garlic begins to sizzle.

Remove clove and add spinach. Cook for a 2 – 5 minutes until wilted.

Season with lemon juice, salt and pepper.

Peel the eggs and cut in half. add to the spinach and enjoy.
