Blue Eyed Trevalla with Mussels and Garlic

Ingredients

 300 g blue eyed trevallaany firm fresh white fish
 300 g fresh mussels
 1 tbsp flour
 3 cloves garlic
 10 g fresh parsley
 400 g fish stock
 30 g flaked almonds
 5 g olive oil
 salt and pepper to taste

What are we cooking today?

Gently poached fish and fresh mussels, in a light healthy sauce. Using a good fish stock for the sauce adds nutrients and flavour to this simple dish.

Getting started

To prepare the trevalla, remove the skin and cut the fish into cubes.

Heat a drizzle of oil in a small frying pan over a medium heat. Coat the fish in seasoned flour and add to the pan. Gently fry and turn to colour the fish on all sides.

Remove from the pan and place on kitchen paper to absorb any excess oil.

Place the almonds, garlic and the parsley in a blender, and blend until chopped.

In a medium saucepan, add the rest of the oil and heat over a medium heat. Add the garlic mix and stir so that it does not burn.

When the almonds start to brown, add the fish, mussels and stock, and cover with a lid.

Simmer for 10 minutes occasionally shaking the pan, until the mussels have opened.

Taste, season and serve.
