Beef Fajita Bowl

 225 g beef sirloin strips
 1 red capsicum, sliced in strips
 2 cups cauliflower rice
 ½ cup red onion, chopped
 1 clove garlic, chopped
 1 tbsp coconut oil
 ½ red chilli, stem and seeds removed, mincedoptional
 1 tbsp olive oil
 1 tbsp Pure Hydrolyzed Collagenoptional
 1 tsp Prebiotic Acacia Fibreoptional
Fajita seasoning
 1 tbsp paprika
 1 tsp garlic powder
 1 tsp onion powder
 ½ tsp cayenne powder
Guacamole
 2 tbsp Guacamoleor store bought Guacamole
What are we cooking today?

This healthy Mexican dish is packed with flavour and can be made as spicy or mild as you wish. Just add as much chilli as your taste desires.

Getting started

Place a pan on medium heat and add the coconut oil.

Once the oil has melted add the onions, garlic, chilli (optional) and Fajita seasoning and sauté for 1 minute.

Add the beef strips and cook for 3-5 minutes.

While the beef is cooking cut the red pepper into strips.

Once the beef is ready add the peppers and cook for an extra 5 minutes.

During those last 5 minutes heat the grated cauliflower in a different pan with olive oil, salt and pepper.

Add Collagen and/or Fibre (optional).

Serve the beef mixture, cauliflower rice and guacamole.

Add low fat sour cream for an extra dimension.
