Avocado Pesto Pasta is a quick and delicious meal for all the family. The zucchini pasta is a clever and healthy alternative to traditional carb filled pasta and equally delicious.
Heat the coconut oil in a pan on medium heat.
Once the oil is melted add in the chicken and cook through.
While the chicken is cooking spiralize the zucchinis and then combine all the Avocado Cream Sauce ingredients in a blender and blend away.
Add the Collagen and/or Fibre (optional) along with all of the other ingredients.
Once the chicken is done combine everything in a bowl and mix well so that the Avocado Cream Sauce covers all of the zucchini noodles.
Top with basil and serve.
I've also made this dish with pork mince as an alternative to chicken which is equally delicious.
A sprinkle of fresh Parmesan cheese is also a delightful finish.
