Avocado Kale Salad

 2 large bunches of kalewashed and chopped
 2 tbsp coconut oil
 3 tsp coconut aminosor gluten free tamari
 4 avocadoschopped
 ¼ cup pumpkin seeds
What are we cooking today?

A super easy and healthy dish that can be a side salad or a filling lunch.

Getting started

Melt coconut oil in a large pan over medium-high heat.

Add kale and stir fry for 5 minutes. The kale should be tender and bright green.

When the kale is done cooking, toss with the coconut aminos.

Serve with avocado and pumpkin seeds on top.

For an extra burst of colour and flavour, add cherry tomatoes, halved.
