Asparagus Salmon Papillotes

This salmon and lemon on a bed of asparagus is delightfully fresh and healthy lunch or starter which is easy and healthy.

 4 salmon fillets (100g each, skin off)
 2 lemons, sliced
 200 g asparagus
 2 tbsp olive oil
 hand-full of dill
 Rosemary sprigs
 salt and pepper
 Tartare Sauce as a side (optional)or low-sugar store bought
What are we cooking today?

A bright and fresh dish, Asparagus and Salmon Papillotes (parcels) are easy to make and delicious for a quick and easy dinner.

Getting started

Preheat the oven to 210°C.

Brush the salmon steaks with olive oil and season them as desired.

Add the lemon slices.

Place each salmon steak in a foil with asparagus and rosemary, bake for 15 minutes.

Serve with dill sprigs and a little pepper.

I usually add steamed baby potatoes which go perfectly with the salmon and asparagus.
