Apple pie is an old favourite and should never go away. This simple recipe doesn't have flour so is suitable for just about everyone.
Preheat oven to 180C.
Grease a 9-inch pie pan with coconut oil, then dust with blanched almond flour.
Arrange 3/4's of the apple spices in concentric circles, fanning out from the centre of the pan.
In a medium bowl whisk together the eggs, sugar, coconut milk, coconut oil, vanilla and almond extracts.
In another bowl combine the almond flour, salt, pine nuts, cinnamon and nutmeg.
Stir the wet ingredients into the flour mixture until fully combined. Pour over the arranged apples.
Arrange sliced apples on top.
Bake for 45-55 minutes, until the pie is set and the top is golden.
Sprinkle with cinnamon and allow to cool for 30 minutes before slicing.
Add a dollop of plain or vanilla Greek yogurt or ice-cream (if feeling decadent).
