Baked Salmon and Asparagus with Lemon Garlic Butter Sauce

Looking to incorporate more Omega-3 fatty acids into your diet? Our highly-rated baked salmon and asparagus with lemon garlic and butter sauce is a crowd favourite for a reason! Not only is it so easy to make, but it’s also a flavour-packed meal you can easily prepare ahead of time to keep you sorted for the week ahead. Asparagus is rich in fibre, potassium, and antioxidants which help promote heart health. Coupled together, you’re all set for a sumptuous, filling, and highly nutritious meal! 

Ingredients

  • 800 g salmon fillets (4 x 200g)
  • 2 tbsp vegetable or chicken stock
  • 1 ½ tbsp fresh lemon juice, or to taste
  • 1 tbsp of your favourite hot sauce (eg. Sriracha sauce)
  • 4 garlic cloves minced
  • salt and fresh ground black pepper, to taste 
  • 3 tbsp butter, diced into small cubes (or ghee or coconut oil)
  • 2 tbsp fresh chopped parsley or coriander 
  • 400 g medium-thick asparagus, woody ends trimmed

  •  1 tbsp pumpkin seeds, dressing
  •  ½ cup of lemon juice
  •  2 garlic cloves, minced
  •  ¼ cup olive oil
  •  salt and pepper to taste
  •  ½ tbsp black sesame seeds
